Bacon Side Dishes

Roasted Cauliflower with Bacon

Our family only recently discovered roasted cauliflower, but it is a staple now. Even our picky kids love it! This simple recipe features the lovely nuttiness of roasted cauliflower with the salty fat of bacon. A perfect pairing! Serves 4. 

1 medium-size head of cauliflower
2 tablespoons olive oil
2 cloves garlic, minced
Juice of half a lemon
4 slices thick cut bacon, chopped
Salt & pepper

Preheat oven to 375 degrees F. Lightly coat baking sheet with olive oil. Break cauliflower head into small florets. Toss florets in a bowl with olive oil, garlic, lemon juice, chopped bacon, and salt and pepper to taste. Spread on baking sheet. Bake 25 to 30 minutes until tender, stirring every 10 minutes. Serve immediately.
